Hacienda Gourmet Recipe: Gazpacho

As Puerto Vallarta begins to heat up, one of the best ways to cool down is a fresh and flavorful chilled gazpacho soup. Hacienda San Angel’s Gourmet restaurant is renowned for having one of the best gazpachos in town. Those who enjoy the refreshing dish while they visit can now savor it when they return home by following the recipe below. Enjoy!
 
Ingredients:
 
½ cup tomatoes
¼ cup cucumbers
¼ cup red bell pepper
¼ cup celery
¾ cup tomato juice

Blend together all the ingredients and season with salt, pepper and olive oil to taste. Garnish with cucumber cubes and parsley. Serve chilled.
 
Serves two.
